Noble Rot, officially known as Botrytis Cinerea, is a fungus, which in the right climatic conditions massively attacks the grapes which start to shrivel like raisins: ‘Noble Rot’ causes grapes to dehydrate while (concentrating sugars) contributing greater intensity, acidity and complexity to the wine, resulting in a distinctive and unique flavour.

The balance of sweetness with the zest of acidity characterizes the Mufìi.

It exhibits intense notes of dried apricot and dates, but with a persistent honeyed and applesauce note.

The colour is golden yellow that becomes progressively darker as it ages.

It can be paired with creamy desserts, chocolate, dry fruits as well as with blue cheese.
