Origin and method of vinification
Grape: 100% Nebbiolo
Vine training system: Guyot
Area of production: portion of vineyard of about 10 acres of our own estate in the area called Maretta, located in the D.O.C. area of Ghemme
Average yield per acre: about 2,000 kg
Harvesting: hand-picked during the first week of October and transported to the winery in small crates.
Vinification: pressing of the whole bunches in a low oxygen environment and fermentation of the filtered must at low temperature (14°C-15°C) all to avoid oxidization.
Ageing: no ageing but 5 months in stainless-steel tanks and 1 month in bottles.
Bottle: slender Bordeaux-style bottle.
Tasting notes
Colour: misty rose pink with golden hues.
Nose: typically fragrant, floral and fruity.
Flavour: fresh, well-balanced and sapid, elegant despite its youth.
Recommended initial serving temperature: 11°C-12°C, uncork just before serving.
Food pairings: very versatile, great with a variety of dishes. Delicate in flavour and aromas, it will not overpower but has sufficient structure to be drunk with rich and spicy food as a refreshing accompaniment.
